This is our regular creamed honey with added cinnamon. Cinnamon creamed honey is by far the most popular flavored honey. Creamed honey is made by controlling the crystallization process that all raw honey will naturally do on its own over time. The biggest difference between controlled and natural crystallization is how the crystals form and multiply. In the creaming process the crystals are formed in very small smooth crystals that make for a pleasing taste and texture. Honey that is left to crystallize on its own will have large sharp crystals. Whether you control crystallization or let nature take its coarse, either can be returned to its original liquid form by gently heating.
